1cupdried unsweetened mangofirmly packed
1cupwalnutstoasted or raw
8whole medjool datespitted
2Tbsp.hemp seeds(plus extra for rolling — optional)
¼cupunsweetened finely shredded coconut(plus extra for rolling — optional)
Add dried mango to a small bowl and cover with very warm water (this will soften your mango so it will be soft enough to blend — so don’t skip this step!). Let soak for 5 minutes, until soft but not soggy. Drain and spread mango out on a towel, patting down excess moisture.
To a food processor, add the mango, walnuts, dates hemp seeds, and shredded coconut. Mix until a soft dough forms. Add extra hemp seeds or shredded coconut if your dough feels too wet. Add extra dates if it feels too dry.
Scoop out dough — in roughly 1 Tbsp. amounts. Roll into balls, and roll in extra shredded coconut or hemp seeds (optional).
Enjoy immediately, or transfer to refrigerator to enjoy later. Store in airtight container, in refrigerator for 1 week or in freezer for up to 2 months.
