Chocolate and Coconut Energy Bars

Prep these chocolate + coconut energy bars before a busy week, or your next weekend trip. They are made with 5 ingredient and take only 5 minutes to make.

Materials

  • 1/2 cup raw cashews
  • 1 cup medjool dates pitted and packed
  • 3 Tbsp cacao powder
  • 1/3 cup shredded coconut
  • big pinch sea salt

Instructions

  • In a food processor or blender, blend all ingredients along with 2 Tbsp. of cold water. Blend until mostly smooth, scraping sides as needed.
  • Transfer mixture to small pan lined with parchment paper. Flatten and smooth bars. Chill in refrigerator for 30 minutes or until firm. Slice into 8 bars and enjoy.
  • Leftovers will keep in airtight container for up to a week or refrigerated in airtight container for up to 2 weeks.
