When you feel lost for a lunch or just want a huge salad, this recipe is one you can rely on! My Easy Avocado + Leafy Greens Salad is simple, fresh, and so easy to make.

Ingredients
  • 1 small sweet potato, or ½ a large sweet potato, diced
  • 1 Tbsp. avocado oil (or sub melted coconut oil)
  • ½ tsp salt, divided
  • pinch black pepper
  • 6-8 large, leafy lettuce leaves, sliced into thin, bite-size strips
  • ½ large, very ripe avocado*
  • ¼ tsp garlic powder
  • ½ fresh lime
  • ⅛ yellow onion, thinly sliced
  • handful fresh cilantro, roughly chopped
Instructions
  1. Preheat oven to 425°F.**
  2. Spread diced sweet potato across a large baking sheet. Drizzle with avocado oil and sprinkle with ¼ tsp salt and black pepper. Transfer to oven.
  3. Roast sweet potatoes for 30-35 minutes or until they are tender and starting to darken on the outside. Remove from oven and let cool.
  4. To make the salad, add the lettuce and avocado to a large bowl. Using your hands, massage the avocado into the leaves.
  5. Add the remaining ¼ tsp salt, garlic powder, and squeeze the lime juice. Toss until well incorporated.
  6. Top salad with cooked sweet potato, onion, and fresh cilantro. Enjoy immediately.
  7. This salad will not keep well in the refrigerator since lettuce, mixed with avocado and lime juice will wilt—which I why I am sharing a single serving for this recipe. If you must, refrigerate in airtight container for up to a day.
Notes
*It is crucial that your avocado is very ripe and soft otherwise the mashing won’t work.

**Cooking the sweet potatoes can be done days in advance if you want to save time. Simply let them cool after cooking and refrigerate them in an airtight container
