One of my all-time favorite food combinations is blueberry-almond butter. I love a blueberry-almond butter smoothie, blueberry muffins with almond butter, and, of course…blueberry-almond butter overnight oats. It is day number 4 of my 5 days of overnight oats and I am sharing this favorite blueberry-almond butter overnight oats recipe with you all!

Like my other overnight oats recipes, this combo is naturally sweetened and satisfying. I love how the warm flavors of the almond butter mix with the sweet, fruity flavors of the blueberries—not to mention the beautiful blue color that my oats turn.
Blueberries are loaded with nutrients to boost mental clarity, get your day off to a good start, and keep you focused throughout the day. Almond butter is a great source of healthy fat and protein so your body will stay satiated until lunch (because no one wants to be snacking at 10am). Thus, these overnight oats are the perfect way to start your morning!

Almond Butter Overnight Oats are the perfect way to start off a busy day. This recipe is naturally sweetened, contains a dozen ingredients or less and comes together quickly.
Ingredients
  • 1/2 cup [url href=”https://www.amazon.com/Bobs-Red-Mill-Gluten-Fashion/dp/B002T1IDYI/ref=sr_1_10_a_it?ie=UTF8&qid=1523923260&sr=8-10&keywords=bobs%2Bred%2Bmill%2Boatmeal&th=1″ rel=”nofollow”]rolled oats[/url] (ensure certified gluten free for gf eaters)
  • 1/2 banana, sliced
  • 1 Tbsp. [url href=”https://wildfriendsfoods.com/collections/all/products/classic-creamy-almond-butter” rel=”nofollow”]almond butter[/url](or sub your favorite natural nut butter)
  • 1 tsp [url href=”https://vivanaturals.com/organic-foods/chia-seeds” rel=”nofollow”]chia seeds[/url]
  • 1/2 tsp cinnamon
  • 1/2 cup nut milk
  • 1/3 cup blueberries (fresh or frozen)
Instructions
  1. Mix and mash all ingredients except the blueberries in a quart-sized mason jar (a fork works well to mash the banana and combine the sticky almond butter). Once combined, gently stir in the blueberries. Refrigerate overnight (or at least 3 hours). Enjoy warm (microwaved for 1-2 minutes) or cold—I enjoy these overnight oats cold best because the chia seeds create a delicious gooey texture when they are soaked. They are still delicious warm though.
